Fall days and an apple cake (with recipe)

I wrote this Warm Apple Cake post for Russian Artists' blog and got in the mood for it myself :). So I baked the cake and we all enjoyed it. It finally feels like Fall here in the Valley!
The recipe is very easy and it will take about an hour to cook. My mother used to make it  for a last minute treat or unexpected company so this recipe is pretty old.
 
Here is the recipe:

Ingredients:
4 large apples, peeled and chopped (about 4 cups)
1 teaspoon cinnamon
1 table spoon lemon juice
5 large eggs
1 tablespoon vanilla
1 cup sugar
1 cup all purpose flour
1 table spoon baking powder
Baking spray, rectangular baking dish (approx. 9 1/2" by 13 12/" and 2" deep)

Preheat oven to 385"F. Prepare the baking dish by spraying it with a non-stick baking spray. Peel and chop apples, sprinkle them with the lemon juice and cinnamon, set aside.

In a large bowl, beat together eggs, vanilla and sugar. Add flour and baking powder, beat together until smooth. Mix with apples and pour into baking dish. Bake for about 35 to 40 minutes.
